Maintaining the chill chain
When you fill your shopping trolley at the supermarket, each product starts a new life. As soon as you remove a chilled or frozen product from the shelf, the race against it warming up begins: the trolley, the car boot and the refrigerator are the 3 stages of this race where a few safety rules should apply. You have bought variety and chosen quality ? It's now up to you to make sure that the chill chain is not broken. From the shop to home, shopping is only finished once the products are tidied away!
THE EXPERT :
Our health depends on the quality, balance and variety of our everyday diet, but also on the safety of the products we eat. Chilled foods (yoghurt and cheese, meat, fish, vegetables, fruit and fruit juice) are living foods. Germs and bacteria can develop in them and poison us if storage conditions are poor.
- During transport between the shops and home, it is vital not to break the chill chain for chilled and frozen foods.
- At home, the refrigerator should be clean and at the right temperature:
- No more than 2 to 3 °C in the coldest compartment for meat, fish and pre-cooked dishes
- 4 to 6 °C in the intermediate zone where you put dairy foods, yoghurt, fromage frais, cakes and crudités
- 8 to 10°C in the vegetable compartment.
- Do not overload the shelves and store food individually wrapped in cling film or foil.
- Remove the original packaging of fresh produce such as cut meat and package it in cling film or foil.
- Remember to wash your hands before handling food!
- Remove any over-packaging on yoghurt packs or sodas, taking care not to damage the products!
- Frozen food should be moved as fast as possible from the cool bag to the freezer.
- Finally, do not keep foods that the family has not had time to eat between two visits to the supermarket: the longer you keep them, the more you risk!
